CANNED PEACH COBBLER  
1 stick butter
1 c. flour
1 c. sugar
1 3/4 tsp. baking powder
3/4 c. milklg. can sliced peaches, drained

Melt butter in 8×8 pan in the oven. Mix together in mixing bowl flour, sugar, baking powder, and milk. When smooth, add drained peaches. Pour on top of melted butter in loaf pan. Bake for 40-50 minutes in a preheated 350 degree oven. Top should be golden brown when finished.

Modified this from a recipe on cooks.com when I was looking for something to make for our dessert party at my daughter’s tonight, to meet my new future daughter-in-law. My goal was to find something that I had the ingredients for in my cupboard! Doing that led me to deciding to make a list of what every baker should have in the pantry at all times:

  • Sugars; granulated, brown, and confectioner’s (powdered)
  • Flours; all purpose, bread, whole wheat
  • salts; table salt, salt substitute, kosher salt, and something fancy, like pink sea salt
  • dried egg whites
  • baking soda and baking powder
  • vanilla, vanilla beans, mint extract, almond extract
  • packaged/canned milks; evaporated, sweetened condensed, boxed milk, dry milk
  • cornmeal
  • tapioca
  • cornstarch
  • pie crusts; graham cracker, chocolate cookie crumb, frozen deep dish crusts
  • Chocolate; dry cocoa, chocolate chips, unsweetened baker’s chocolate
  • nuts – at least two varieties (Walnuts, Pecans, Almonds are my recommendations) some chopped, some halves
  • Vegetable oils; both a good olive oil (for bread making) and a good all purpose oil (i.e. canola, sunflower)
  • cream of tartar
  • coconut, shredded
  • zests; lemon, orange
  • corn syrup
  • instant pudding – vanilla and chocolate
  • corn syrup

In your refrigerator or freezer, you should always have:

  • pie crusts (yup, also mentioned them above, use them all the time, desserts, Quiche etc.)
  • dairy products; milk, cream, butter AND margarine, shredded cheeses, cream cheese
  • eggs
